Today has been a hectic day of running errands and being busy, busy. I had just enough time before bedtime to try out a recipe I’ve had in my head, ever since trying an unofficial Bullet Proof Coffee at home using store brand coffee, Dr. Bronner’s Virgin Coconut Oil (my favorite!), and some butter from grass-fed cows, shipped over from Ireland. My first taste of this blended coffee was not awful, but for a girl who gets excited about pumpkin spice coffee creamer coming out each October ( I know, the ingredients are awful!) it was lacking my preferred taste of something other than coffee.
I won’t say I’m 100% happy with this recipe (more like 90%), but considering the blender started running before the lid was on and splattered warm-hot coffee on me and across the kitchen, I’m going to call it quits where I’m at and play around until this is pumpkin perfection in the coming days. For now I present you with my first attempt at pumpkin spice flavored, unofficial bullet proof coffee! It is very frothy, and has a nice blend of pumpkin, maple, cinnamon, nutmeg and ginger. The coconut oil and butter make this very creamy, and the maple syrup and touch of homemade vanilla extract added the finishing touches. I can almost close my eyes and picture a fresh baked pumpkin pie with whipped cream in front of me- though this is by far healthier! I just came across an article today that listed new studies on the health benefits of cinnamon which include boosting metabolism (which is one reason to be drinking some version of Bullet Proof Coffee in the first place!) along with enhancing antioxidants from other food or drinks in your body and helping to increase brain function! I’m definitely adding cinnamon to my coffee from now on! 2 cups fresh brewed coffee
1/2 cup pureed pumpkin
2 Tbs. maple syrup
1 1/2 Tbs unsalted butter from grass-fed cows ( I used Kerry Gold)
1 1/2 Tbs. virgin coconut oil (Dr. Bronner’s is excellent!)
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1/4 tsp nutmeg
1/4 tsp ginger
Put all ingredients into your blender. (Be careful with the hot coffee and make sure the lid of your blender is completely on!) Blend for approximately 30 seconds. Enjoy!
